Crowd-Pleasing Recipe: Bite-Sized S'mores

S'mores are delicious. But, they're also messy. Until now. I present to you, one-bite s'mores (you could try and eat these in two bites, but it's not worth the hassle of trying to bite a cooked marshmallow in half, IMO). I first found this recipe in a Pampered Chef cookbook that I've since lost, but have committed to memory. Aside from these being positively delicious and addicting, the thing I like most about these is you can make them and pack them up to go pretty soon after they're done (unlike cakes that need to cool or be decorated, etc., etc.).


Ingredients:

1 1/4 C. graham cracker crumbs

1/4 C. granulated sugar

5 tbsp. melted butter

12 marshmallows cut in half using kitchen scissors like this, yielding 24 halves

2 Hershey bars broken into bricks 

Directions:

Preheat oven to 350°F. Mix sugar, graham cracker crumbs and butter into a bowl. Place about .5 tbsp of mixture into each cup of a mini cupcake tin, like this, and press down/up to make a cup. Bake 5-7 minutes or until golden brown. Remove pan from oven; place one Hershey brick into each cup (do this step first, placing all 24 bricks down, giving the chocolate time to melt before putting down the marshmallows.

Place one marshmallow half, cut-side down, into each cup. Return to oven 1-2 minutes or until marshmallows are just slightly softened. Remove from oven, cool for 10-15 minutes and remove cups from pan, loosening with a butter knife (I like to put them each into mini cupcake liners like this if serving to others).
