SNOWMAN LUNCH

We’ve all heard “Don't play with your food!", but sometimes we need to break the rules and have a little fun with our meals. Here’s one fun idea, perfect for the winter season.

Build your own snowman lunch! Super easy, so fun, and healthy too!

Start with a quesadilla or a sandwich, cut into different size circles; jars, mugs and cups worked perfectly to cut our quesadilla. Then you'll need assorted finger foods to create the snowman.

Some examples are included below, but use anything you have on hand.
  • Baby carrots cut diagonally for the nose
  • Raisins for the eyes and buttons
  • Pretzel sticks for the arms
  • Almonds for buttons
  • Apple or orange slices for a hat
Put everything in little bowls and let your child build her own wintertime friend. She can eat and recreate over and over.

So go ahead and give yourself permission to play with your food. Create a healthy snowman and enjoy!

APPLE CUPCAKES
Here's a great snack to get you through your day. Your kids can even help to prepare it!

Ingredients:
  • 1 apple
  • peanut butter or almond nut butter
  • chia seeds
  • unsweetened cocoa powder
Directions:
Slice one apple in half. Take the core out of each half. Fill the hole with your favorite peanut butter or almond nut butter. Sprinkle some chia seeds on the top and then dust with cocoa powder.

Eat and enjoy!

QUICK AND EASY SOFT PRETZLES

What you need:

  • 1-1/2 cups warm water
  • 1 tablespoon white sugar
  • 5 teaspoons active dry yeast
  • 4 cups all-purpose flour (plus some to flour work surface)
  • 1/4 cup melted butter
  • 1 teaspoon coarse salt
  • 1 egg, beaten
  • Additional coarse salt to sprinkle on pretzels, as desired.

What you do:

  1. Pre-heat oven to 425 degrees.
  2. Mix water and sugar together in a bowl until sugar has dissolved and then add the yeast. Allow mixture to stand for about 5 minutes - until the yeast softens and begins to form a creamy foam.
  3. In a separate bowl, whisk flour, butter and salt together until well mixed. Add the yeast mixture and stir with a fork until the dough starts to cling. Turn the dough out onto a floured surface and knead until smooth.
  4. Cut dough into 15 equal pieces. Roll each piece between your hands into long ropes at least the thickness of a pencil. To make into traditional pretzel shape, make a large “U” shape and then connect the two ends, twist 2 to 3 times and bring down to the center of the U and press together. You can make any shapes you would like.
  5. Place on baking sheet, brush with egg and sprinkle coarse salt over them, if you'd like.
  6. Bake for about 8 to 10 minutes, until pretzels are golden brown. You will need a slightly longer cook time for thicker pretzels. Allow to cool on pan for 2 minutes. Enjoy!
